How To Make Kale - BEST Kale Salad Recipe

Quick, Easy and Delicious KALE Salad.

Prep time: 5 min. 

Thought I would share one of my favorite salads. I recently starting making it with kale because we all know the benefits of eating our dark leafy greens!  This is basically a Caesar Salad Dressing that I have adapted to satisfy my own taste buds.

The key to a good salad is using fresh ingredients and quality cheese. I did skimp on the olive oil this time which I don't usually do but the quality cheese I used--Reggiano Parmesan Cheese and other ingredients-- made up for it. 

In a large mixing bowl, start with a generous amount of olive oil, perhaps a 1/3 cup, then squeeze almost all of a half lemon, a dash of Cholula, a dash of Nama Shoyo (raw unpasteurized soy sauce), a dash of garlic salt and a large dollop of mayonnaise. Whisk all together. Fresh garlic can be substituted for the garlic salt. Just smash a half garlic clove, whisk with the mixture, then remove before serving. Finally take several handfuls of chopped kale and toss in the salad dressing. Then the fun part-- Scrunch and Toss and Scrunch and Toss until the leaves are coated. Then shave the Reggiano Parmesan Cheese on top, grind some fresh sea salt and pepper to finish the salad. Now add slivers of steak or chicken, avocado and cherry tomatoes to turn this salad into a main dish. I could eat a variation of this salad several times a week! But never skimp on the cheese!

Celebrating A Birthday In Napa

So Mom and Sisters treated me to a trip to St. Helena/Napa for my birthday. Our friends are part owners in Frog's Leap Wine so our first stop was wine tasting at the gorgeous winery, Frog's Leap in Rutherford. 

Stopped at OxBow Market in Napa for fish tacos followed by gluten free 
cupcakes at Kara's Cupcakes

Dinner at one of my favorite restaurants, Tra Vigne...right now-- dreaming of their famous 'mozzarella' (aka melt in your mouth cheese)...giving my sweet mama a hug...and my 2 beautiful sisters.

Stayed overnight in St. Helena at a friend's home (think: 1900 farmhouse). This was our view out the front porch. Truly breathtaking views all around us. We were ensconced in grape vines and baby olive trees.

Brunch at one of my other favorite restaurants, Bistro Jeanty, in Yountville with my sister Julie...Love this place!

My Opalite Necklace

Every now and then I create a necklace that just hits all cylinders, in my design mind that is. Kind of like, it's better than how I hoped it would be. So today I am feeling a bit melancholy over selling a necklace that I wished I could have kept for myself. I say that very 'tongue and cheek' because the only way an artist can stay in business is to sell her work! The "Opalite Necklace on Oxidized Silver Chain" is such a necklace. A dear customer just purchased it ALONG with my other favorite necklace, the "Tiny Gold Filled Triangle Necklace". For some reason, I am obsessed with both of these together (along with the "Rainbow Mystic Smoky Quartz Briolette Oxidized Hoop Earrings".)  I could wear them every day. Now I will have to create another set for myself. *sigh*
